Renee's Italian Wedding Soup
An enjoyable and simple Italian wedding soup with tasty meatballs, soft pasta, and healthy spinach in a tasty chicken broth.
Ingredients:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 cup acini di pepe pasta
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions:
Put breadcrumbs, Parmesan cheese, parsley, ground beef, and a beaten egg in a bowl
Make small meatballs by mixing the meat well
Chop the onion and garlic and cook them in a large pot until they smell good
Turn the heat down to low and add the chicken broth
Carefully add the meatballs to the broth that is already cooking
Add the acini di pepe pasta and cook it until the pasta is soft and the meatballs are cooked all the way through
Cook until the spinach wilts after adding the chopped spinach
Add pepper and salt to taste
If you want, you can serve it hot with extra Parmesan cheese and fresh parsley on top
