Sausage Pizza Paleo Twice Baked Sweet Potatoes



With these tasty twice-baked sweet potatoes, you can enjoy the flavors of sausage pizza in a healthier, paleo-friendly way. They are full of tasty Italian sausage, vegetables, and dairy-free cheese, making them a filling meal.

Ingredients:

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 Italian sausage links, casings removed
  • 1/2 cup pizza sauce
  • 1/2 cup sliced mushrooms
  • 1/4 cup diced bell peppers
  • 1/4 cup sliced black olives
  • 1/2 cup shredded dairy-free cheese
  • 2 tablespoons chopped fresh basil

Instructions:

Turn on the oven and heat it up to 400F 200C

Clean the sweet potatoes and use a fork to make several holes in them

Add salt and pepper to the sweet potatoes and rub them with olive oil

Put them on a baking sheet that has parchment paper on it

After you poke a hole in the sweet potatoes with a fork, they should be soft after 45 to 50 minutes

While the sweet potatoes are baking, brown the sausage in a skillet over medium-low heat

Use a spoon to break it up into small pieces as it cooks

Let the sweet potatoes cool down a bit after they're done

Scoop out the flesh from each sweet potato by cutting them in half lengthwise

Leave a thin layer of flesh inside the skin

Put the cooked sausage, pizza sauce, mushrooms, bell peppers, and black olives in a bowl

Add the sweet potato flesh and mix it all together

Put the mix back into the sweet potato skins, and then sprinkle dairy-free cheese on top of each one

Put the stuffed sweet potatoes back in the oven and bake for another 10 to 15 minutes, or until the cheese melts and starts to bubble

Before serving, sprinkle chopped fresh basil on top of the stuffed sweet potatoes
