Dark Chocolate Tart with Sea Salt
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1 tablespoon ice water
- 10 ounces dark chocolate, chopped
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Sea salt flakes, for garnish
Instructions:
In a food processor, combine flour, cocoa powder, powdered sugar, and salt
Pulse to mix
Add cubed butter and pulse until mixture resembles coarse crumbs
Add egg yolk and ice water, pulse until dough comes together
Press dough into a tart pan, prick the bottom with a fork, and chill for 30 minutes
Preheat oven to 375F 190C
Line chilled tart shell with parchment paper and fill with pie weights or dried beans
Bake for 15 minutes, then remove parchment paper and weights, and bake for an additional 10 minutes until crust is set
Let crust cool completely
In a small saucepan, heat heavy cream until just simmering
Place chopped chocolate in a heatproof bowl and pour hot cream over chocolate
Let sit for 1-2 minutes, then stir until smooth and glossy
Stir in vanilla extract
Pour chocolate ganache into cooled tart shell and spread evenly
Chill tart in the refrigerator for at least 2 hours, until ganache is set
Before serving, sprinkle sea salt flakes over the tart
Slice and enjoy!
